Orecchiette Burrata and Cherry Tomatoes

Ingredients

(4 people)

400 g of orecchiette

200 g of burrata

250 g of cherry tomatoes

A bunch of fresh basil

Fresh chili pepper (to taste)

Extra virgin olive oil (to taste)

Salt and Pepper To Taste.

Preparation

Cut the cherry tomatoes in half.
Tear fresh basil leaves.
If you prefer a spicy touch, finely chop the chilli.
Cooking of the orecchiette:

In a large pot, bring plenty of salted water to the boil.
Cook the orecchiette following the directions on the package to obtain an al dente consistency.
Drain the orecchiette and reserve a little of the cooking water.
Preparation of the seasoning:

In a large skillet, heat a generous drizzle of extra virgin olive oil over medium heat.
Add the cherry tomatoes and cook for about 3-4 minutes until they start to release their juices.
Adding flavourings:

Add crushed red pepper (if desired) for a touch of spiciness.
Stir in the fresh basil leaves and cook for a minute until they release their scent.
Combining the ingredients: Add the orecchiette to the pan with the seasoning. Stir gently, adding a little of the pasta cooking water if necessary to create a creamy sauce. Cut the burrata into small pieces and add it to the orecchiette, mixing until it blends and creates a creamy consistency. Flavor adjustment: Adjust salt and pepper to taste. If necessary, add a drizzle of extra virgin olive oil before serving. Service: Plate the orecchiette on individual plates. Garnish with fresh basil leaves and, if desired, a light sprinkle of black pepper. Serve the orecchiette with burrata and hot cherry tomatoes, enjoying the creaminess of the burrata, the freshness of the cherry tomatoes and the aroma of the basil and chilli. Enjoy your meal!
