Our ORGANIC TAGLIATELLE NEST | N ° 88 from the 1881 Collection by Stefano Berruto are the right pasta shape for a rich and tasty dish. They are obtained from the mixture of organic whole durum wheat semolina of Italian origin and water, slowly dried to maintain the nutritional values ??and organoleptic characteristics of the wheat unaltered. They have an excellent cooking resistance and you will notice it yourself, right from the first bite.

DID YOU KNOW THAT: According to legend, tagliatelle were invented in 1487 by Mastro Zafirano, on the occasion of the marriage of Lucrezia Borgia to the Duke of Ferrara. It is said that the cook was inspired by the bride's beautiful blonde hair to wax this new fresh pasta. In Piedmont, especially in the Langhe area, tajarin are highly appreciated as they have a thinner and more elegant section than Tagliatelle. The tajarin were born in the kitchens of the Langhe and Monferrato farmhouses and have spread throughout Piedmont since the fifteenth century, when we have the first evidence of this handmade pasta. Initially they were consumed mainly on holidays, on Sundays or for important occasions. According to tradition, tajarin are eaten with typical condiments of the area, such as the bedside table, a Langhe ragù based on lard, sage, rosemary and courtyard giblets (poultry and rabbit livers, crests, kidneys, hearts), at least 2 hours to reach its optimal cooking. But they can also be enjoyed with Bra sausage, with truffles or soaked in savory sauces such as the exquisite roast sauce and the one based on bacon, onion and red wine that is eaten in the Cuneo area.
