Our CAPELLINI | N ° 3 are part of the large selection of Pasta ARRIGHI produced only and exclusively with durum wheat semolina. They are very similar to the Fidelini but with a slightly larger diameter. They are an ancient pasta shapes from central-northern origin. The preparation by hand required a lot of mastery and for this they were a symbol of great refinement.
