Cold pasta with datterini tomatoes, rocket, salmon and stracciatella
This cold pasta dish is quick, practical, perfect when it's very hot. It is ready in two minutes.

Ingredients
300 g of Bio Berruto 1881 wholemeal penne rigate
200 g of smoked salmon
400 g of datterini tomatoes
50 g of rocket
140 g of stracciatella (mozzarella)
Lemon zest to taste
Fresh parsley to taste
1 clove of garlic
Extra virgin olive oil / salt / pepper to taste
Preparation
- Boil the water for the pasta
- Cut 150 g of tomatoes into small pieces and put them in a container, add the garlic clove, parsley and a drizzle of extra virgin olive oil, then blend everything
- Cut the remaining tomatoes, put them in a large bowl and season with salt and pepper
- Add the smoked salmon cut into strips, the rocket and add the tomato cream obtained, then season with salt and pepper
- As soon as the water boils, pour the pasta and drain it al dente, then let it cool, trying not to let it stick
- Season the pasta with tomatoes, rocket and salmon, serve and add the stracciatella to the last with the freshly grated lemon zest
