Farfalle with ricotta cream and caramelized onion

A very special recipe, simple and very tasty at the same time!

Ingredients

(per person)

80gr of Farfalle

40 gr of fresh ricotta

3 small red onions

1 tablespoon of sugar

Preparation

1) Bring the water to a boil, I recommend without salt to leave the taste of the pasta unaltered! Meanwhile, peel the red onions, blanch one whole onion and one half.

2) While the farfalle are cooking, cut half an onion into julienne strips and chop the other half. In a pan, melt a tablespoon of sugar with the extra virgin olive oil and fry the chopped onion together with the whole blanched onion, until caramelized.

3) Blend the remaining blanched onion with the ricotta and a pinch of salt, use this cream to serve and season. Toss the pasta with the caramelized onion. Enjoy this pasta in simplicity!
