Tagliolini with artichokes, salmon and pecorino

Ingredients

(for 2 people)
150g Tagliolini
a small thinly sliced shallot
2 artichokes with the thorns cleaned and thinly cut
100 grams of coarsely chopped smoked salmon
50 grams of fresh pecorino in flakes
Salt, extra virgin olive oil and black pepper to taste
A few walnuts for garnish

Preparation

Let's move on to the stove ...
Let's proceed with a small sauté of shallots and artichokes in a large pan with extra virgin olive oil, salt and pepper. Drain the noodles cooked in boiling salted water, and toss them in the artichoke pan adding the salmon. Stir in a drop of the pasta cooking water for a few seconds. Serve with pecorino and walnuts ....
