Amorini with Sautéed Mushrooms and Cream
Ingredients
for 4 people:
400 g Amorini pasta
300 g fresh mushrooms (champignons, porcini mushrooms, or mixed)
200 ml cooking cream
2 cloves garlic
Extra virgin olive oil (evo)
Fresh parsley to taste
Salt to taste
Black pepper to taste
Preparation
Preparation of the sautéed mushrooms: Clean the mushrooms thoroughly and slice them. In a pan, heat a drizzle of extra virgin olive oil and brown the whole garlic cloves. Add the mushrooms and cook them over medium-high heat until they are soft and golden. Season with salt and pepper, then remove the garlic cloves and sprinkle with chopped fresh parsley.
Preparation of the cream: In the same pan as the mushrooms, pour the cream and heat it over low heat, stirring gently to blend the flavors.
Cooking the pasta: Cook the Amorini pasta in plenty of salted water, following the cooking times indicated on the package. Drain it al dente and transfer it directly to the pan with the cream and mushrooms.
Sauté and serve: Sauté the pasta over medium heat for a couple of minutes, until it is well blended with the seasoning. Plate and serve immediately, to best enjoy the creaminess of the cream combined with the intense flavor of the sautéed mushrooms.
