Fettuccine with Pamela

Ingredients
(for 4 people)
400 g of Fettuccine
180 g of tofu
60 g of walnuts
30 g of basil
100 g of rocket
2 cloves of garlic
Extra virgin olive oil (evo)
Salt to taste
Preparation
Tofu preparation: Cut the tofu into cubes and cook it in a pan with a drizzle of extra virgin olive oil and the two whole garlic cloves, until it is golden and crispy. Remove the garlic from the pan once it has released its aroma.
Pesto preparation: In a blender, combine the basil, rocket, walnuts, a drizzle of extra virgin olive oil and a pinch of salt. Blend everything until you obtain a smooth and creamy pesto. If necessary, add a little pasta cooking water to adjust the consistency.
Cooking the fettuccine: Cook the fettuccine in plenty of salted water, following the cooking times indicated on the package. Once ready, drain and transfer to a large bowl.
Dressing: Mix the fettuccine with the prepared pesto, making sure that each fettuccine is well seasoned. Add the golden tofu and mix gently to combine the flavors.
Service: Plate the fettuccine and serve immediately, still very hot, to fully enjoy the freshness of the pesto and the crunchiness of the tofu. Enjoy!
