Lasagna Bolognese with Mixed Meat Ragù

This rich and hearty dish is made with layers of fresh pasta, a skillfully cooked mixed meat ragù and a generous sprinkling of grated cheese, which melts during cooking, giving an explosion of flavor to every bite. Perfect for a Sunday family lunch or a special dinner, this dish is a true comfort food that will win over everyone.
Ingredients
for 4-6 people:
500 g fresh lasagna
400 g mixed minced meat (beef and pork)
1 onion
1 carrot
1 celery stick
400 g tomato puree
200 ml red wine
500 ml béchamel sauce
100 g grated cheese (Parmigiano Reggiano or Grana Padano)
Extra virgin olive oil (evo)
Salt to taste
Black pepper to taste
Preparation
- Preparation of the mixed meat ragù: Finely chop the onion, carrot and celery. In a saucepan, heat a drizzle of extra virgin olive oil and fry the chopped vegetables until golden. Add the minced meat and brown it over medium-high heat, stirring well to loosen it. When the meat is golden brown, add the red wine and let the alcohol evaporate. Add the tomato puree, season with salt and pepper, and cook over low heat for at least 1 hour, stirring occasionally.
- Preparation of the béchamel sauce: If you prefer to prepare it at home, you can do it by melting 50 g of butter in a saucepan, adding 50 g of flour and stirring well. Gradually add 500 ml of hot milk, continuing to stir until you obtain a smooth and thick sauce. Season with salt and add a grating of nutmeg.
- Assembling the lasagna: Prepare a baking dish and spread a light layer of ragù on the bottom. Place a first layer of fresh lasagna on top, then add another layer of ragù, followed by a layer of béchamel and a sprinkling of grated cheese. Continue layering until all the ingredients are used up, finishing with a generous layer of béchamel and grated cheese.
- Cooking: Cook the lasagna in a preheated oven at 180°C for about 30-40 minutes, or until golden brown on the surface and cooked to perfection. Let it rest for a few minutes before cutting into portions and serving.
